OBSERVATIONS & CORRECTIVE ACTIONS: Observed Person In Charge place gloves on hand and begin handling raw roast beef at prep table. Discuss with Person In Charge hands need to be washed for at least 20 seconds before donning on gloves. Person In Charge discarded gloves and washed hands before placing new gloves on. Observed employee cut tomatoes at prep table then place tomatoes inside container with bare hands then remove tomatoes from prep table to walk-in cooler.

Person In Charge cooled shredded cheese back down inside pepsi reach-in cooler, shredded cheese was out less than 1 hour. (Corrected On-Site) Observed shelled eggs sitting on top of make table above 41 degrees Fahrenheit. Person In Charge removed shelled eggs to pepsi cooler to be cooled down. Shelled eggs were out less than 1 hour. (Corrected On-Site)

Observed several packages of sliced cheeses out of original packaging with no date marking at pepsi reach-in cooler. Observed cooked ground beef inside container and 1 package of roast beef inside pepsi reach-in cooler with no date marking. Person In Charge stated ground beef was prepared 1 day prior.

OBSERVATIONS & CORRECTIVE ACTIONS: Observed no sanitizer bucket at grill station area were foods are being prepared. Observed low sanitizer inside bucket next to prep table. Employee made bleach water in bucket for sanitizer at 100ppm. Discuss with Person In Charge that sanitizer dispenser above three compartment sink is not dispensing the correct concentration for Quat sanitizer between 200ppm-400ppm.
